Paelo Chicken Soup
 

This is not your mama’s recipe! I’ve recreated this paleo-style chicken soup 🍲 to be delicate, complex and fresh. It’s perfect for the spring months ahead and will give you that great dose of gut loving support you need for this weather transition. 

Prep: 20 minutes
Serving: 3 BIG bowls
Total Time: 1 hr

Ingredients
- 1.5 litres of purified water
- 1 organic chicken (I love Blue Goose brand)
- 2 parsnips
- 2 carrots
- 12 leeks chopped up
- 1 garlic clove
- 1.5 tbsp Himalayan salt
- Cracked black pepper
- Parsley to garnish
- Optional: ginger

    Directions

    1. Place all the ingredients in a big pot on medium heat for 1/2 hr
    2. Turn the heat down to a gentle simmer for 20 mins
    3. Take the chicken out, place on a cutting board to carve
    4. Take out some of the whole root veggies (to add texture to finished soup)
    5. Use a hand blender to puree the remaining veggies and soup
    6. Garnish with parsley
